At home Kani salad


I love going out for sushi as much as anyone, but my budget doesn't always allow it, so sometimes I make my favorite things at home, I also get to add my own touch which is always nice. Kani salad is a refreshing and easy salad to prepare, here's what you'll need:(serves 6)
8 kosher crab sticks
6-7 Lebanese cucumbers peeled
1 cup Kikoman Panko crumbs (lightly toasted in a pan with a teaspoon of oil)
2 avocados
1/4 cup spicy mayonnaise

Recipe: 1/2 cup low-fat mayonnaise (Hellman's or Kraft, Miracle whip will NOT do)
2 tbsp Sriracha hot sauce (the one with the rooster on it)
1/4 tsp roasted sesame oil (this is the secret ingredient)

Start by pulling apart the crab sticks to get strings then cut them in 3. Peel and slice the cucumber into matchsticks about the same size as the crab stick. In a bowl toss them this all together, then add the dressing, then the Panko crumbs and finally top with slices of avocado. Enjoy!
