Deviled eggs or "Oeufs Mimosa"

I love deviled eggs, they make me think of dinner parties when I was a kid and my mom would prepare them for the buffet. It's something that;s easy to prepare, tastes good and everyone loves. Here's what you'll need:

6 to 8 eggs
2 tbsp kosher mayonnaise
1/4 tsp mustard (depending on what you prefer, you can use Dijon or regular)
1 tsp chopped chives
1 tsp relish (optional)
salt & pepper
Boil the eggs for 7 minutes then let them cool completely. Once peeled and rinsed, cut in half and gently remove the yolk and keep the white halves separate. Mash all the yolks with the remaining ingredients then pipe or spoon into the eggs white "boats". Sprinkle with chives or paprika and serve on lettuce leaves and enjoy!
