Party sandwiches

Who knows why we love these little morsels so much, but we do and the fact that they are simple to make just makes us love them all the better!
There are many different varieties to choose from: tuna, chopped egg, cucumber, cheese, salmon spread or even cold cuts if you opt for a meat meal. They can be made on white bread or brown bread and can be topped or decorated with tiny pickles for a little oomph. All you need is an occasion to serve them and a nice platter to present them and Voila! Here's what you'll need:


1 loaf white sandwich bread or 1/2 a white loaf and half a brown loaf
2 cans tuna drained
4 boiled eggs peeled
4 cucumbers peeled and sliced into thin disks
1 container salmon spread or cream cheese and a package of lox
1 cup mayonnaise (divided between the egg, tuna and cucumber)
salt & pepper
lettuce for garnish or to add to the sandwiches
2 green onions chopped (optional)
2 large kosher party sandwiches pickles diced (optional)
1 tsp chopped dill (optional)
1 jar cornichons or stuffed olives (optional)
toothpicks
Tuna salad: flake the tuna up with a fork then add the mayonnaise, salt and pepper and if you like, green onions and pickled, set aside.
Egg salad: mash the egg up then add dill (optional), mayonnaise, salt and pepper, set aside.
To prepare sandwiches take 2 slices of bread and spread the filling of your choice but not till the edges, leave a couple of centimeters empty then close and cut the crusts off, then cut up into 4 triangles. For the cucumber sandwiches, spread some mayonnaise on the bread then top with thin layers of cucumber, close and proceed the same way as above, same for cream cheese and lox.
When all of the sandwiches are cut up, place them on a platter and garnish with cherry tomatoes and parsley and if you like, you can stick a cornichon or olive on a toothpick and stick it in the little triangles.
Serve with a nice lemonade or tea and enjoy!
