Spinach, beets and orange salad

My mom made this salad at my brother's request and it was a hit! What a delicious medley of flavors and textures, I was very pleasantly surprised. She drizzled a creamy dressing over it and sprinkled it with toasted slivered almonds, absolutely delicious, here's what you'll need:
1 package fresh baby spinach
3 to 4 small beets boiled till tender then peeled
2 oranges
1/3 cup slivered almonds
dressing:
1 tsp Dijon
1/4 tsp garlic powder
1/3 cup olive oil
1 tsp mayonnaise
juice of half a lemon
1 tsp honey or maple syrup
salt & pepper
Whisk all of the ingredients for a nice creamy texture.

Place the spinach on a platter then top with the sliced beets, place them so you can still see the spinach from the outer edge of the platter, then top the beets with the segments of orange, drizzle the dressing and  sprinkle the nuts all over. This is a must try salad which you can always dress with a vinaigrette of your choice, you can switch the nuts for cashews and swap mandarins for oranges or even pink grapefruit.
