Breaded meat stuffed zucchinis

There are many ways to stuff vegetables, now this recipe isn't the healthiest, but it's definitely tasty! The recipe can be adapted in many ways, the base is the same, but the sauce can be changed. I haven't yet decided if this will be zucchinis is mustard and garlic sauce or in tomato and onions. Here's what you'll need in either case:
(serves 6)

6 large zucchinis split in half lengthwise and core partially removed
1 pound kosher minced meat
1/4 breadcrumbs
2 eggs
3/4 cups flour
1/4 tsp garlic powder
1/4 tsp onion powder
a dash of nutmeg
a dash of turmeric
salt & pepper to taste
2 tbsp water
1 tbsp oil
oil for frying
Tomato and onion:
1 can diced tomatoes
1 large diced onion
salt & pepper to taste
Mustard garlic sauce:
1 tbsp Dijon mustard
2 cloves garlic mashed
1 cup saffron infused water
salt & pepper to taste

First prepare your meat, in a large bowl combine the meat with the breadcrumbs, spices water and tbsp of oil and mix well with your hands, then set aside. Then prepare the zucchinis and stuff them with about 2 tbsp worth of meat, dredge them in flour then in the beaten eggs and fry meat side first for 2 to 3 minutes till they start to brown, then the other side for another 2 minutes. Drain on a paper towel and proceed with the sauce. If making the tomato based one, saute the diced onion in a large pan, then add the canned tomatoes, add seasonings, let it come to a boil, then add the zucchinis, lower to heat to a minimum and let them simmer covered for 20 minutes, then uncovered for another 10 to 15 minutes.
If making the second sauce; heat a pan with some oil, then add the minced garlic, the mustard and saffron water, bring to a boil and add the zucchinis, follow the same steps as above for cooking method and time.
Enjoy!
