Cheesecake bites drizzled with chocolate

A great way to serve cheesecake when you have a buffet is to make individual cake bites.
They can be coated in graham crackers crumbs or Oreo cookie crumbs and drizzled with chocolate. They can even be frozen and thawed as needed, so here's what you'll need:
(makes 24 to 32 bites depending on size)

2 packages kosher cream cheese room temperature
1 small ricotta container
3 medium eggs
3/4 cup sugar
2 tbsp lemon juice
1 tbsp lemon peel, grated
1 tbsp vanilla extract

1 cup graham cracker crumbs
1/2 cup chocolate chips
2 tbsp milk (warm)

Preheat the oven to 325F. In a mixer or even a blender beat or blend softened cream cheese (do not over beat), the ricotta as well then add the sugar, the eggs, one at a time, beating after each addition, then add the vanilla, lemon rind and juice.
Pour the mixture into a lined sprayed Pyrex and bake 45 to 50 minutes or until almost cooked (the center should be a little wobbly). Let it cool then refrigerate for a few hours or overnight. Once cool, remove from pan and break apart into a large bowl, with a fork you must then mash the larger pieces till it starts to resemble mashed potatoes (or if you have a melon baller, dip it in very hot water then scoop out a ball then wet it again and repeat). Then wet your hands and take a piece and roll it, about the size of a small ping pong ball, then roll it around in the graham crumbs & place it on a tray. Once all the bites are ready, you can make a small dent to them with the back of a spoon. Now melt the chocolate in a bain marie, or in the microwave for under a minute, then add the warm milk and whisk till it's smooth and runny enough to drizzle over the bites. Refrigerate and serve on little waxed cookie papers. Freeze the rest till needed. Enjoy!
