Blackmail Quesadilla

It's 10pm and my husband is hungry for something tasty, his words, not mine. As luck would have it, I've finally managed to make him like watching cooking shows with me, it's good for me because he won't nag me to change the channel, but bad for me, because he now expects me to "whip" stuff up on a moments notice, or as he likes to joke; "if you won't make it, I'll tell everyone on your blog you don't cook". Blackmail...I'm just saying! Anyway, tonight I offer him Quesadillas, so here's what you'll need:

2 kosher soft shell tortillas
1 tomato thinly sliced
1/2 sliced avocado
2 tsp soft goat cheese crumbled
1 tsp sun-dried tomato pesto or  2-3 very finely chopped sun-dried tomatoes
1 tbsp olive oil
sprinkle oregano
salt and pepper

Heat a shallow pan (preferably a frying pan) on high, then with a brush, brush each side of the tortillas with the oil, then lay 1 tortilla in the pan and let it heat for about 40 seconds till it gets a little color then flip it and then do the same for the second. Now lower the heat to medium and place one tortilla in the pan, spoon on the pesto and spread evenly, then add the goat cheese crumbled around evenly, the avocado slices then top with fresh tomatoes and spices, cover with the 2nd tortilla and carefully, with a large spatula, lift and flip the Quesadilla and cook on the other side for another 2 minutes while pressing it down to flatten. Once the Quesadilla has browned nicely on both sides, remove from the pan, slice in 4 and serve as is or with sour cream. Enjoy!
