Leftover rice into "Chinese" rice


The other night was a slow kitchen night, I didn't feel like cooking but didn't think that letting my husband "starve" to death was very nice of me, so I decided to buck up and throw something togther. Lucky for me I had some leftover white rice in the fridge, as well as chopped up broccoli and mushrooms...so what does it equal when you need a meal under 10 minutes and have a hodge podge of ingredients in your fridge? Fried rice is what it gives!
Here's what you need:

1 cup chopped mushrooms
1 cup chopped broccoli
1/2 cup corn niblets
1 small diced onions chopped or 4 chopped green onions
1 cup cooked chicken (optional) cut up
1 1/2 cup cooked rice
2 tbsp soy sauce
1/4 tsp onion powder
1/4 tsp ginger powder (optional) or grated fresh ginger
salt and pepper
2 tbsp oil

In a large skillet or frying pan, heat the oil on high then 
add in the onions, saute for 2 to 3 minutes, then add in and broccoli and mushrooms, saute another 3 to 4 minutes, add the soy sauce, spices then the rice, mix thoroughly till all is well incorporated, make sure to 
heat through and serve.
