My husband tried to dissuade me from making something I've never made before, especially for a crowd, but I figured that it couldn't be bad, so I went for it. I have to say that considering the fact that it's a parve (non dairy) recipe and that I was using just whipping cream and no egg custard as the traditional recipes require, it was pretty damn good and if anything, it looked great, so here's what you'll need:
2 cups kosher mascarpone cheese or tofutti cream cheese
3 tbsp coffee liquor or rum
1/4 cup sugar
1 cup whipping cream (35%) or nutri-whip
24 Italian ladyfingers (you might need less depending on the bowl you choose to serve it in)
2 cups espresso
2/3 cup shaved bittersweet chocolate or 2 tbsp powdered cocoa
(You can make this desert in a large Pyrex or a trifle bowl)
In a large bowl, whip the cream to stiff peaks, then set aside. Then in another bowl, mix the mascarpone cheese, liquor and sugar together, then gently fold into the whipping cream.
Now dip the cookies into the coffee (soak one side) and prepare 1 layer in the dish then add layer of cream, sprinkle with chocolate and repeat the process till done, (Cream sprinkled with chocolate must be the last layer) refrigerate and serve!
