If you like Pina Colada and getting caught in the rain...I've had this line stuck in my head since New Year's Eve!
I had a can of coconut milk in my pantry for the last, oh I won't even say how long and had no idea what to do with it, so on New Year's I decided to try my hand at a cocktail that was sure to ring in the New Year with a sweet & tropical bang!
Here's what you'll need:
3 oz. light Rum
6 oz pineapple juice (fresh or canned)
2 ounces coconut cream (or 2 oz coconut milk and 2 tbsp sugar)
2 cups ice
pineapple spears to garnish and of course an umbrella!

Add everything to a blender and blend till all the ice is crushed, pour into a tall glass and enjoy!
This drink can be made without the Rum for a "virgin" version, enjoy!
