Tomato barley soup

My mother in law gave me this recipe and I've been making it from my first year of marriage. My husband loves it and so do his friends! 
Here's what you'll need:

2 carrots diced
2 large diced potatoes
1 small onion diced
1 cup red or white kidney beans
2/3 cup barley
2 tbsp tomato paste
1 tbsp olive oil
6 to 8 cups water or chicken stock
1 tbsp chicken soup powder (if just using the water)
1/2 tsp garlic powder
1/2 dried parsley
salt and pepper

To a heated pot add the oil, the diced vegetables, saute them for 5 minutes, then add the stock and spices. Once the soup comes to a boil, add the barley, then lower the heat to low and simmer for 30 minutes. Finally, add the beans and simmer another 10 minutes, then serve.
