This banana cake is a bit lighter then my previous recipe, I bake it in a shallow baking pan, more like a brownie tin, so that you get a nice piece that isn't too dense or heavy.
Here's what you'll need:
3 ripe bananas
Here's what you'll need:
3 ripe bananas
1/2 cup sugar
1/4 cup brown sugar
1/4 cup brown sugar
2 eggs
1/4 cup coconut milk
1/4 cup coconut milk
1/2 cup chocolate chips
1/3 cup vegetable oil
1 3/4 to 2 cups flour
1 tbsp baking powder
1/2 cup walnuts
1/4 slivered almonds (to sprinkle on top)
1/2 cup walnuts
1/4 slivered almonds (to sprinkle on top)
less than a 1/4 tsp salt
1 tsp vanilla
1 square 8x8 or 9x12 baking pan
Mash
up the bananas then add the rest of the ingredients and mix well, it should
be stiffer then a regular cake batter, more like a muffin batter texture. Grease the
pan, pour in batter then sprinkle with almonds and 2 tsps brown sugar and bake in a 350 F oven for about 45 minutes.
Great with a glass of milk or a coffee, enjoy!
