Velvety cream of vegetables soup

I was craving vegetables, but I wanted them without too much cooking effort. So I decided that soup would be the answer, that way, I could have the veggies I craved, add the protein I needed and a dash healthy spices to the pot for good measure.

Here's what you'll need:



3 celery stalks, washed and cut up in large chunks
3 carrots, peeled and chopped
2 onions, peeled and quartered
1 large turnip, peeled and chopped
1 large sweet potato, peeled and chopped
1 cup red lentils
1 tbsp olive oil
1/2 tsp turmeric
salt & pepper
enough chicken stock to almost cover the vegetables (or water with chicken soup substitute)

Bring everything to a boil, then lower the heat 
to minimum, cover and cook for 45 minutes or till all the veggies are tender, then blend with immersion blender till perfectly smooth and enjoy!
