I had leftover white rice in my fridge and I didn't know what to do with it. I looked around and found my homemade pesto, so I decided to combine the two, I added in some toasted pine nuts and voila!
You can serve it cold, or warm up the rice first, then add in the pesto and nuts. I sprinkled some kosher Parmesan over top and served with a salad.
