So here's what you'll need:
(serves 6)
1 package of your favorite pasta (in this case, Farfalle)
1 large onion, diced
1 pint mushrooms, chopped
1 cup broccoli florets (optional)
2 cups milk
1 tbsp cream cheese
1/4 cup kosher Parmesan cheese
2 tbsps butter or margarine
2 tbsps flour
1/4 tsp garlic powder
1 tbsp olive oil
1 pinch nutmeg
salt & pepper
In a heated pan, add the olive oil then add onions and saute for about 5 to 6 minutes till they start to brown, then add the mushrooms and saute them till all the water comes out of them and they start to brown, season with salt and pepper and remove from the pan, they will be used later. Now in the same pan, add the butter, melt it at a medium heat and sprinkle in the flour and whisk it together so that you have a smooth paste, continue whisking till it changes from yellow to the beginning of golden brown, then slowly pour in the milk while you whisk. It'll start coming together as a sauce, add the seasoning and the cream cheese and keep on whisking, the sauce should now be thick and lump free, add in the onions, mushrooms and broccoli if using it, warm through and serve over pasta. Sprinkle Parmesan over top and enjoy!
