You can make a parve tzatziki with all the same ingredients as the yogurt one, except that you have to swap the yogurt for light mayonnaise. For obvious health reasons, you'll have to use less per serving, but it will still wallop a nice punch in a pita with grilled chicken and a sprinkle of oregano.
1 cup light kosher mayonnaise
1 cucumber, peeled, seeded, grated and strained
1 to 2 cloves crushed garlic
1 tbsp chopped fresh dill
juice of half a lemon
2 tsp olive oil
salt and pepper
Mix all the ingredients and let them "get happy" in the fridge overnight for full flavor. Serve with grilled meats or fish, or use as a dip, enjoy!
