I wanted to make a filling lunch but didn't want to use any bread, so I opted for a frittata, it's quick and easy to prepare. Here's what you'll need:
(serves 4)
8 eggs
1 small onion, diced
1/2 cup red bell pepper, diced
1/2 cup green pepper, diced
1/2 cup mushrooms, chopped
2 large potatoes, peeled, then sliced and micro waved in a
dish with 1/3 cup water for 3 to 4 minutes (this will cut cooking time of
potato by 90%)
1/2 shredded cheese of your preference (optional)
1 tbsp olive oil
Salt & pepper
In a large frying pan, heat the oil, then add in the
potatoes and sauté till they start to brown, then add in the onions, sauté for
a few minutes, then add the remaining veggies, add salt and pepper, and pour in
the beaten eggs, spread the cheese over the whole thing, let it cook over
med-low heat for about 3 minutes, then gently flip it (onto a plate, then slide the uncooked side back into the pan)
and cook for another 3 to 4 minutes. Slice in into wedges and serve with
avocado and tomato slices and a dollop of sour cream, enjoy!
