Asian inspired tofu with broccoli and farfale

I know a lot of people that aren't big fans of tofu or if they are, their kids and husband are definitely not! My husband is part of that select group, he likes tofu burgers, but that's about it. Anyway, yesterday I felt like having tofu, so I sliced some up and marinated it in some some Asian flavors then added it to sauteed veggies and pasta, it was delicious, here's what you'll need:



1 package firm kosher tofu
1 large onion, sliced
2 cups broccoli, washed and cut up
1 pint mushrooms, sliced
1 cup cooked pasta
1 tsp honey or 1 tsp apricot jam
1 tbsp peanut butter
salt & pepper

Marinade for tofu:

3 green onions, chopped
1 knob ginger, grated
2 cloves garlic, crushed
1/4 tsp garlic chili paste
1/4 cup low sodium soy sauce
1 tsp mirin
2 tbsp sesame oil

Slice and marinate the tofu for at least an hour then pan fry it in a tbsp of sesame oil till golden and caramelised on both sides then set it aside. In the same pan, add the remaining oil, then saute the onion for a few minutes till it starts to change in color, then add the mushrooms, saute them for about 5 minutes then add the broccoli and cook for 5 minutes, now add the marinade that you made for the tofu, add to that the honey and peanut butter, salt and pepper to taste and toss till everything is well coated, add in the cooked pasta, toss and finally add in the tofu, heat everything through and serve!
Of course the same recipe can be made with chicken or beef for those who aren't into tofu.
