I was on my own for supper and I wanted something filling and comforting, so I boiled up some linguine and sauteed some frozen veggies added the the dairy, sprinkled Parmesan over top and voila! Pasta Primavera, 1 package linguine
1 package spring frozen vegetables (asparagus, snap peas, carrots, red peppers, broccoli florets)
1 yellow zucchini, sliced
1 large garlic clove, crushed
2 tbsp olive oil
3 tbsp butter
3 tbsp flour
11/2 cup of milk (skim or full fat)
2 tbsp cream cheese (instead of heavy cream)
1/4 tsp garlic powder
salt and pepper to taste
1/4 Parmesan
Boil the pasta in salted water, then strain.
In a large saucepan, heat the oil, then add the garlic, and straight to that add, the veggies, toss and let them saute for about 5 minutes, then remove them and keep on the side and in the same pan, add the butter, then the flour and whisk till it becomes a paste and let the paste cook for a couple of minutes, keep whisking, it'll brown a little then to that add the milk and keep whisking till a sauce is formed, add the cream cheese and spices, whisk till everything is silky, if it's too thick add more milk, then toss in the pasta and veggies, lastly add the Parmesan and serve hot.
