Not too long ago, we had people over for a barbecue and I wanted to make some hamburgers and Moroccan keftas, but I also wanted to make kebabs, which are basically torpedo shaped hamburgers with the spices of your choice. I like mine the way my mom makes them, so this is what I'll share with you. Here's what you'll need:
(makes 15 to 18 large kebabs)
2 pounds kosher ground beef
1 onion, finely diced
1 cup of washed and chopped coriander
1 tsp cumin
1 tbsp oil
salt to taste
(if you like them spicy, you can add a finely diced chili pepper)
Mix everything in a bowl and keep it covered in the fridge for at least an hour then shape them into torpedoes and spear them onto skewers & off to the BBQ for grilling.
These are terrific with rice, corn on the cob, condiments such as Dijon mustard of prepared Tahini sauce.
