Moroccan beet salad


This is a beautiful and simple salad. It's very tasty and is a staple on any Shabbat or Holiday Moroccan table. Here's what you'll need:

2 pounds boiled beets, peeled and cooled
(or 2 to 3 cans whole beets)
1 cup chopped fresh parsley
3 cloves crushed garlic
1 tbs cumin
1/4 cup vinegar
1/3 cup oil
salt and pepper to taste

Toss everything is a large bowl, let it marinate a few hours in the fridge for full flavor, serve and enjoy!
