Salmon croquettes and Quinoa tabbouleh

I was looking for an interesting supper last night and  I had undressed Israeli salad in the fridge which made me think Tabbouleh, the rest just kind of came up by fluke, but what a tasty fluke it was! Here's what you'll need:



Tabbouleh
2 cups quinoa cooled (cooked as per instructions on the package) + 1/4 tsp turmeric just because it's healthy
1 cup diced tomatoes
1 cup diced cucumbers
1 cup chopped fresh parsley
1/2 cup chopped fresh mint (optional)
2/3 cup diced onions
4 tbs olive oil
3 tbs vinegar
salt and pepper
Croquettes
2 cans tuna or 1 cup cooked salmon (you could also combine the two)
3 large boiled potatoes
1 large finely diced onion or 4 green onions
2 eggs, beaten
1/2 tsp garlic powder
salt & pepper to taste
4 tbs flour 
Oil for frying

In a large bowl shred the fish with a fork, then add the mashed potatoes, the diced onions, the spices, the eggs, flour and mix. It's better to let it rest in the fridge, it'll help so that when you want to shape the patties the mixture won't be too soft. Once cooled, shape the patties whichever shape you prefer  then pan fry in vegetable oil, drain on paper towels. 
For the Tabbouleh, mix all the ingredients today and let it marinate it the fridge.
