Sourdough bread panini with pesto and feta cheese

Since it's Tisha B'Av this week, it's the perfect time to flex those dairy muscles. Last night was not a muscle flex per say, more like a muscle twinge... Paninis are a great way to make any boring old sandwich amazing, add some pesto to that and voila, instant hit!

Here's what you'll need:

(serves 4)

8 large crusty slices of sourdough bread

2 avocados, sliced

2 tomatoes, sliced

1/2 cup shredded cheese of your choice

1/2 cup feta cheese, crumbled or in small chunks

8 tbs pesto

4 tsp softened butter

Heat up your panini press, butter the outside of your sandwich and place butter side down on the plate, then spread 1 tsp of pesto on each side of the unbuttered sides of the bread (spread pesto on 2 slices), then layer one side with tomato and avocado and the other with both cheeses, make sure to have enough of the mix for all four sandwiches. Carefully put the sandwich together and place buttered side down on the press and close, then leave it in till golden brown and bubbling on the sides. Serve with a nice salad and or soup and enjoy!
